What had happened was I wanted to make a yummy pumpkin treat. And I wanted a bar treat. And I wanted something "in" said bars, like a chip or candy. Perhaps of the white chocolate variety. Oh, but cinnamon is so tasty with pumpkin. Luckily I found this delicious recipe that yielded an amazing, soft cake-like bar that was a full-on pumpkin flavored treat with a smattering of white chocolate and cinnamon chips strewn throughout. A delicious dessert, snack, breakfast (no judging!--pumpkin is healthy, right?) for you to enjoy and share. I'm pretty sure Dave and I only shared these with each other--I honestly don't remember if Madaline and Ernie had any. But still, it wasn't like I sat and ate the whole pan (cause I totally could have). I love the texture and the combination of flavors is perfect for fall.
After scouring for the right recipe, I found this one from Christy, aka The Girl Who Ate Everything. Christy called them blondies, but I just thought they were far cakier than that--although her photos look a bit more blondie than my cakey version. Whatever, they taste awesome. I omitted the nuts and swapped the butterscotch chips for cinnamon chips. The result was exactly what I was looking for. A simple recipe with big flavor results, I can see these bars becoming a fall favorite.
Pumpkin Cinnamon White Chocolate Bars
Ingredients
2 cups flour
1 Tablespoon pumpkin pie spice
1 teaspoon baking soda
3/4 teaspoon salt
1 cup butter
1 1/14 cups brown sugar, packed
1 egg
2 teaspoons vanilla extract
1 cup pumpkin puree
1 cup white chocolate chips
1 cup cinnamon chips
In a medium bowl, whisk together flour, pumpkin pie spice, baking soda and salt.
In the bowl of a stand mixer, or a large bowl with a hand-held electric mixer, beat but butter and brown sugar on medium-high speed until fluffy, scraping the sides of bowl as needed.
Add the egg and vanilla, beating to combine. Then mix in the pumpkin.
Reduce to low speed and gradually add the flour mixture, mixing just until incorporated.
Stir in white chocolate and cinnamon chips.
Spread batter into a greased 9 x 13 inch pan.

Bake at 350 degrees F for 35-40 minutes or until a tester inserted in the center comes out clean, bars are puffed and set.
Set pan on wire rack to cool before cutting into bars.
Makes 24 bars.
