White Chocolate Cookie Butter Truffles


These truffles were a mistake actually.  Well, not a mistake so much as they weren't supposed to happen. I wanted to make a different truffle but I couldn't find the components I needed to make it happen.  However, a bag of Spekulatius cookies and a jar of Speculoos cookie butter said I had everything I needed to make these little balls of spiced cookie heaven.  Smooth, creamy, full of flavor and dressed up in white chocolate and topped with a piece of those delicious spiced windmill cookies.  These truffles are perfect for sharing. In fact, I shared them right away with my November Foodie Pen Pal!

Cookie Butter Snaps


I made cookies...out of cookie butter.  Circle of life?  No?  Whatever, they're awesome.  Speculoos Cookie Butter or Biscoff spread, either way grab a jar and get in the kitchen.  These are super simple, crispy cookies that taste as close to an actual Biscoff cookie as I'm ever going to make.  I love the crunch, the snap and excellent buttery, slightly gingery flavor from these cookies. And did I say easy? Cause they are simple.  A bowl and a spatula and five ingredients.  Why isn't everyone making these cookies?

Cookie Butter Cream Bars


Remember that Speculoos Cookie Butter I got from Rinnie for last month's Foodie Pen Pals?  Well, how cool is it that I found a recipe to use it in for my Secret Recipe Club assignment!  Two worlds collide! But first, let's discuss these bars.  A sweet, creamy and delicious filling made from cookie butter tops a flaky shortbread crust gently seasoned to mimic the filling.  These are a wonderful treat and made for a lovely dessert.  Madaline and Ernie weren't familiar with cookie butter, but Ernie declared these a win.  There could be a little more flavor intensity from the cookie butter, but it's still a lovely flavor.  And the over all consistency reminded me of pumpkin pie made with a double crust.  These would be an ideal dessert for the holiday season.
