Chocolate Covered Cherry Bombs
These truffles/cookies/cake balls are so yummy! And they'd be an adorable and easy little Valentine's Day treat. A twist on a traditional chocolate covered cherry, fudgy cake wraps around a sweet maraschino cherry and is then dipped in milk chocolate for a crisp coating, sealing in the deliciousness. I thought I had enough cherries with stems (the wick of the "bomb") but must not have been paying attention to the second jar since some of my treats are without the stems. But still equally yummy and fun. My cousin Angela messaged me almost immediately upon trying these, looking for the recipe. Yup, they're that good.

Monster Cookie Dough Truffles
You realize there are a lot of cookie and candy recipes from the holidays that I haven't yet shared, right? I'm just so crazy that there are not enough days for me to share it all. So over the next few weeks, they'll trickle in here or there, but I think this one I saved--a Monster Cookie Dough Truffle--would be awesome for New Year's Eve. They are quick to make and you can eat them one handed with the rest of your party appetizers. And something about peanut butter and chocolate goes well with a celebratory beer to ring in the new year. We love these truffles and I had to hide them from Dave for fear no one else would get a chance to try them. The eggless cookie dough is sweet, soft and loaded with monster cookie goodness. Dipped and milk chocolate and topped with sprinkles, swap out the holiday colors for rainbow or anything that works for your party theme.

Christmas Funfetti Cake Batter Truffles
It's almost Christmas, so there's a good chance that you're busy but you still need some holiday treats or gifts or you might have some little, idle hands that are on winter vacation and maybe they need something fun to do. Enter these Chrismas Confetti Cake Batter Truffles. Little balls of cake batter goodness with holiday-themed sprinkles dipped in white chocolate and ready to gift or shove in your face--either is fine, I won't judge. The batter comes together quickly and it's a no bake treat, so even the little ones can help with this recipe start to finish. Make up a quick batch for the unexpected visitor or the neighbor who shoveled out your driveway. Or tuck this recipe away for a birthday party and use rainbow sprinkles. Or save for next week and use gold or silver sprinkles for a fun New Year's treat. No matter when you make them, they'll be delicious.

White Chocolate Cookie Butter Truffles
These truffles were a mistake actually. Well, not a mistake so much as they weren't supposed to happen. I wanted to make a different truffle but I couldn't find the components I needed to make it happen. However, a bag of Spekulatius cookies and a jar of Speculoos cookie butter said I had everything I needed to make these little balls of spiced cookie heaven. Smooth, creamy, full of flavor and dressed up in white chocolate and topped with a piece of those delicious spiced windmill cookies. These truffles are perfect for sharing. In fact, I shared them right away with my November Foodie Pen Pal!

Oatmeal Creme Pie Truffles
I'm wrapping up Truffle Week with a fun, super delicious and by far the easiest truffle ever. So tasty and easy I almost felt guilty hearing people gush about them. Rachel's uncle could not contain himself, raving about how much these treats, dipped in almond bark and topped with a sprinkling of cinnamon sugar, taste just like Little Debbie Oatmeal Creme Pies. Why would I feel guilty upon hearing this kind of praise? Because the third and final ingredient in these amazingly simple candies are, in fact, Little Debbie Oatmeal Creme Pies!

Muddy Buddy Truffles
These were so messy to make. But ended up being super tasty and worth the extra clean up. And the powdered sugar that end up everywhere, including on my computer and my face. I vacuumed my computer. Then I had to wash my face for fear Dave would lick me.
But beyond that, these are so much fun. Muddy buddies are one of those treats I keep meaning to make but just haven't. So of course I jumped at the chance to make a truffle version. The center is a creamy peanut butter cookie dough. Then it's dipped in milk chocolate and rolled around in powdered sugar twice for a sweet coating.

Snickerdoodle Truffles
Yes and please. These truffles are amazing. Like I was super duper excited to find the recipe, then make them, then eat them. And I ate a lot of them. The truffle inside is a creamy cookie dough seasoned just like a snickerdoodle, and the white chocolate coating is flavored with ground cinnamon. Add a drizzle of chocolate for texture (and in this case color), flavored with cinnamon oil. Then, just to make it the most authentic of snickerdoodle treats, it's dusted with a bit of cinnamon sugar. Positively amazing and delicious.

Peanut Butter Pretzel Truffles
These are one of my favorite truffles. I love the salty sweet combo of the pretzels and chocolate paired with the peanut butter creamy center. It's just so stinkin' good. This quick treat is perfect for when you want something to satisfy the sweet-salty cravings but don't want to bake or spend a lot of time on them. There is the chilling component which means you can't just make these and eat them right away, but they don't require a lot of hands-on work. So you can just use those hands to pop them into your mouth.

Chocolate Chip Cookie Dough Truffles
Confession: I'm not a cookie dough fan. Meaning, I never felt compelled to eat the raw chocolate chip cookie dough straight from the mixing bowl. And cookie dough ice cream never intrigued me. Even though I worked at homemade ice cream shoppe in high school, with access to buckets fool of the chocolate chip cookie dough balls that other scoopers would eat by the handful, I just didn't understand. So I was a little ho hum about these truffles. But when I decide that this week I would deliver five days of different yummy truffle recipes, it was inevitable that I include these. But of course I'm glad I did. So is Dave. And my friends Rachel and John, who were the lucky recipients of this beautiful tray sampling all of this week's truffles. Pretty, no?

Cake Batter Truffles
I know right? Little balls of birthday cake flavor wrapped in candy coating and topped with sprinkles. It's like a portable, one-bite birthday party! And they are amazing! Who knew you could dunk a ball of birthday cake in a little almond bark, top it with sprinkled and get something so fun and so delicious. Rachel had a birthday a couple weeks ago, so I whipped up a batch of these tasty truffles for the occasion. Dave thought that were amazing, and Rachel was excited because she wouldn't be obligated share them with her husband since he's not a fan of white chocolate or almond bark. He's certainly missing out, but that just means more for the rest of us.

Flax Glowballs
A little chocolatey, a little coconut, and little almond combined with ground flax and oatmeal to make a truffle like energy snack that's both healthy and, I believe, vegan. (Please let me know if I'm mistaken, and which ingredients make it not vegan. I'm not well versed in vegan cooking.) Unfortunately, I didn't actually taste these treats. See, I meant to make them before giving up chocolate for Lent, but unfortunately I ran out of time and ended up making them on Ash Wednesday, so no taste-testing for me. But them smelled amazing and I think the combination of cocoa, coconut and almost, with the added nuttiness of the oatmeal and the flax, would be quite decadent. I don't believe the banana adds too much flavor, but I imagine you could swap that for applesauce if you think banana would be too much. Dave wouldn't try these (I think he's afraid of flax), but I really do think I'll make these again for myself.

Brownie Batter Truffles
Sigh. As delicious as these treats are, I was sad to make them. My coworker and friend Beth took another job, so we had a little going-away lunch for her. Since I know she doesn't like cake (correction, she likes cake, she just has an obscene level of self-control and wouldn't indulge in something less than spectacular), I decided not to order one from our catering department (their cakes definitely qualify as less than spectacular). So I searched for the perfect bite-sized treat that Beth (and I and everyone else) would love but wouldn't feel too indulgent about eating since they are tiny and not big slabs of greasy frosting coated dry cake (true, less than spectacular cake graces my workplace). Clearly, the best alternative is a ball of eggless brownie batter dipped in chocolate and topped with seasonally appropriate sprinkles (see: seasonal baking item compulsion). The catered lunch did come with brownies automatically. When I spied one of my coworkers grabbing a brownie rather than one of my truffles, I (jokingly) said to him, "What the hell are you eating that for?" Mildly ashamed he put the brownie down, grabbed a truffle and upon tasting it, he said, "Yeah, that was definitely the right question to ask me." Tasty? I think so.

Oreo Truffles
My mom makes the best chocolate. Seriously, she has been making it for years and my family has been fighting over it for just as long. Instead of baking during the holidays, my mom would make pound upon pound of homemade fudge, chocolate covered pretzels, and clusters of various nuts. She even makes molded candy for all kinds of occasions. She would make Easter candy in cute bunny shapes--hollow, solid or even these tiny one inch bunny molds she'd make in all kinds of pastel colors. She would make this to sell to friends for use in their Easter baskets. Embarrassingly enough, I'd sit at the kitchen table as a child and watch her toil away, never putting two and two together when some eerily similar looking bunnies showed up in my Easter basket. But I digress, as it's almost Christmas. Several years ago, my mom noticed a local chocolatier selling chocolate covered Oreos for a dollar piece. Out of her mind, my mom figured she could sell them three for a dollar and turn a profit and thus added those to her repertoire. Then a couple of years ago, she figured out how to make Oreo truffles--these delicious crushed Oreo treat dipped in milk chocolate that are both decadent and simple to make. She taught me, and today, I'm sharing with you.
This is less of a recipe and more of a process and has been featured on lots of blogs. I'm not sure where my mom learned, but since I got it from her, she's my citation. These are delicious. Rich and chocolatey, they are perfect for adding a little bit extra to a cookie tray or packing up in a box for the chocolate lover on your gift list. Have a little fun and be creative with the topping--you can used colored chocolate to drizzle over or all kinds of sprinkles. These can be personalized or color-coordinated for any occasion, so keep these in your back pocket for year round indulgence. I'd wanted to color mine in the traditional red, green and white for the holidays, but my green chocolate melts must have been a little old because they wouldn't melt properly, even with a little shortening to help them along. Melting chocolate, as long as you use a good quality chocolate (my mom and I use Merkens), is easy and you don't need any fancy tools to do it. In fact, Dave did most of the work on these--I just rolled the balls and drizzled the colored chocolate on the finished truffles. Don't be scared--these truffles are totally worth it.
