Mini Pancake Muffins with Blueberries or Sausage


I love pancakes.  But I also love muffins.  So these little guys are just little bites of breakfast heaven that give you the fluffy, tender pancake flavor that you love in a perfect mini muffin form with a golden crust.  Flavored up with blueberries (or any fruity mix-in) or sausage (sweet and savory!) and served with maple syrup, you'll have breakfast bites that can be nibbled on the go or would be easy for little hands.  Traditional blueberry or amped up with sausage bits snuggled into these pancake bites, these mini muffins are a great make ahead breakfast option that you can freeze in advance and heat in the microwave for busy mornings when scratch pancakes just won't happen.  And a fun new way to enjoy your pancakes!

I've been considering making these for a while after seeing them on different blogs and on Pinterest, but I finally decided to go for it when I saw Camille at Growing Up Gabel whip these up for Secret Recipe Club this month.  Camille made a scratch pancake batter and divided it among heer mini muffin pans before dropping a few blueberries into each muffin.  Since I wanted to double up this recipe, I used a prepackage baking mix just to make things easy.  First I experimented with putting a few blueberries or sausage pieces in each muffin well, then topping that with batter.  This worked really well for the sausage which became enveloped in the batter.  The frozen blueberries, while tasty, of course stayed sunk in the bottom of each muffin and thus some of them (certainly not all) sort of fell out of the muffin.  So then I tried mixing the blueberries into the remaining batter and dividing that into the tins directly combined. This worked wonderfully, plus gives that traditional bluish-purple blueberry pancake hue.  Overall, I think I'd put big chunks (strawberries, sausage, bacon) in the muffin wells first, but mix smaller bits (blueberries, chocolate chips) directly into the batter.  Either way, if you're looking for a fun pancake alternative that makes an easy pre-made breakfast you can pull from the freezer on a busy morning, look no further.

Mini Pancake Muffins with Blueberries or Sausage


Ingredients

4 cups baking mix
4 Tablespoons sugar
2 2/3 cups milk
2 eggs
2 teaspoons vanilla extract
1-2 cups blueberries, as desired
4-6 sausage patties, optional, cut into pieces

In a large bowl, combine baking mix and sugar.


In a medium bowl or large measuring cup, mix together milk, eggs and vanilla.  Pour into dry mixture and mix to combine.



Option 1:  Drop a few blueberries or pieces of sausage into the cups of a greased mini muffin tin.  Divide pancake batter evenly into muffin cups.  Note: I used a 2/3 full medium cookie scoop to divide the batter.

 


Option 2: Stir blueberries or sausage pieces into pancake batter.  Distribute batter evenly among the cups of a greased mini muffin tin.


Bake at 350 degrees F for 10 to 12 minutes. Cool slightly in pan for 3-5 minutes, then serve warm with maple syrup.  Repeat with remaining batter and mix-ins.


To store extras, cool completely then pack in an airtight container or zip-top bag and freeze. To reheat, microwave on high for 30-45 seconds.

Makes 8 dozen mini pancake muffins.
