Oatmeal Muffin Mix


Here's another homemade mix perfect for gifting. And I love this one. This mix is the one my mom first introduced me to and thought it can be used for bars, cookies and pancakes, I grew up using it exclusively for oatmeal muffins. I remember being 11 or 12 years old and waking up on a Sunday morning to pull out this mix and make oatmeal muffins for the family. To this day I still have a special place in my heart for oatmeal muffins. So when I wanted to package up some gifts created with homemade mixes and recipe cards, I knew I wanted to include this one. It makes about enough mix for 3 batches of muffins--and they're really good muffins, particularly warm and smeared with butter of jam--so be prepared to make more of this mix pretty quickly.

Just like the pancake mix, this one comes from my mom's Make a Mix Cookery cookbook. Again, a bunch of pantry staples make up the ingredient list, and you can make some flavor additions, like cinnamon and nutmeg if that's more your speed. Play with the muffin recipe itself, too. I used to fill the muffin wells halfway with batter then add a dollop of jam before topping it off with more batter. This made for an amazing warm muffin with a little extra flavor and fun.Whether for your own pantry or a gift complete with a fun recipe card, whoever whips up these oatmeal muffins will be very satisfied.

Oatmeal Muffin Mix


Ingredients

3 cups flour
1/2 cup sugar
3 1/2 teaspoons baking powder
1 1/2 teaspoons salt
1 cup brown sugar
1 1/2 cups shortening
3 cups oats

In a large bowl whisk together flour, sugar, baking powder and salt until well combined. Add brown sugar and whisk to incorporate throughout.


Using a pastry cutter or two knives, cut shortening into mixture until it has a sandy texture.


Stir in oats to distribute throughout.


Store in an airtight container for up to 3 months or package individually for gifts.

Makes 10 cups.

Oatmeal Muffins

Ingredients

3 1/3 cups Oatmeal Muffin Mix
2/3 cup milk
1 egg

Place muffin mix in a medium bowl. In a small bowl, combine egg and milk, then add all at once to muffin mix and stir to combine and create a thick batter. Divide among 12 greased muffin wells. Bake at 400 degrees F for 15-20 minutes until set and golden.

Makes 12 muffins.
