Oatmeal Cookie Pancakes


Dave always gives me a hard time when I try to have dessert for breakfast.  Like if I say I want ice cream or cake at 8 am, he tells me that apparently those aren't appropriate breakfast foods.  Whatever.  So I was thrilled with this recipe that combined proper breakfast foods (oatmeal and pancakes) with my favorite type of dessert (cookies).  Hello?  Have you met me?  Of course I want a cookie for breakfast!  And these pancakes really do taste just like oatmeal cookies.  I love how nutty and sweet they are, loaded with oatmeal cookie essentials, like cranberries, cinnamon chips and nuts.  Plus they cook up fluffy and moist, like a really good pancake ought to.  Perfect and hearty, this breakfast will absolutely be gracing our brunch table again.

Visit some of the other bloggers in my group by checking out the blog hop at the bottom of this post.  To learn more about Secret Recipe Club, click here.  This month I had the pleasure to bake from Mostly Food & Crafts where Danielle catalogs all fund and tasty dishes she makes with her kids, as well as the craft projects they've worked on.  I actually pinned one of the crafts that I think will make super fun gifts.  There were lots of delicious looking options to choose from and I'm looking forward to trying some of the chocolate recipes after drooling a a bit over the Peanut Butter "Cheese" Ball and Banana Nutella Bread (can't wait for another round of ripe bananas!), as well as her Peanut Butter Smore's Bars and Cookies & Cream Brownies.  But when I saw the recipe for these Oatmeal Cookie Pancakes, I just knew they would be amazing.  Go visit Danielle to see all the other fun stuff she has to make.  I upped the quantity of walnuts, swapped the raisins for dried cranberries and for good measure I tossed in some cinnamon chips.  I only had one banana, but I don't think it made a difference.  The pancakes were still soft and fluffy, with just a hint of banana flavor (a second one might have made the flavor too dominant).  I loved these, Dave loved these, and since I packaged up the leftovers and tossed them in the freezer, I get a chance to have cookies for breakfast a few more times before I have to whip these up again.

Oatmeal Cookie Pancakes


1 cup old fashioned oats
1 cup flour
1/2 cup brown sugar
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon baking soda
1/2 cup walnuts, chopped
3/4 cup sour cream
3/4 cup milk
2 eggs
1 teaspoon vanilla extract
1 ripe banana, mashed
1/2 cup dried cranberries
1/2 cup cinnamon chips
1/4 cup butter, melted

In a medium bowl, whisk together oats, flour, brown sugar, baking powder, cinnamon, baking soda and walnuts.


In another bowl, combine sour cream, milk, eggs, and vanilla extract.


Add egg mixture to flour mixture and stir to combine until a batter forms.  Fold in mashed banana, then stir in dried cranberries and cinnamon chips.  Stir in melted butter.


Heat a lightly greased griddle over medium-high heat.  Using about 1/4 cup of batter for each pancake, pour onto hot griddle and cook for about 2-3 minutes until tops bubble and edges are set.  Carefully flip and cook for another 2-3 minutes.



Remove cooked pancakes to a baking sheet and keep in an 200 degree F oven until all the pancakes are cooked.  Serve hot with maple syrup.


Makes about 18 pancakes.

  5. I am not sure what sounds better, the pancakes or the cookies, they are based on. All I do know is, they sound scrumptious.

  10. This is such a neat idea. A hybrid of sorts between pancakes and cookies. I think this may have just solved my "burn out" of eating pancakes.

  13. I think dessert in the morning is just fine...followed by cold leftover pizza or fried chicken ;-) Your pancakes sound wonderful, such a different take on the same-old-same-old.
