We love breakfast. Every weekend I make a point to cook up a big breakfast at least one morning. So when I asked Dave what kind of pancakes sounded good to him, he asked for chocolate chip. I'm so glad he did because these pancakes were fluffy, slightly sweet and had a good about of chocolate for breakfast. I'm getting much better with my pancake flipping, and must say these pancakes turned out very well. I think the use of vanilla yogurt helped aid the fluff factor, as opposed to an all fat version of pancakes. Whatever the reason, these pancakes were a hit and since it was Dave's idea, I didn't have to beg for breakfast chocolate--although I liked the mini chips since the chocolate was more distributed than with a regular chip. Powdered sugar or maple syrup, either way these are a breakfast win, whether for the weekend or a busy morning.
In trying to choose a pancake, I took to Pinterest and searched, tossing out ideas to Dave until his ears perked up, finally finding this recipe from Gaby at What's Gaby Cooking? Originally a sour cream batter, I substituted fat free vanilla yogurt since I'd used up all my sour cream the night before during dinner. But no matter because these pancakes still turned out fluffy and I think the extra hint of vanilla really made them shine. Feel free to use either, because I'm sure they'll be good either way. As I said, I used mini chocolate chips, stirring most of them into the batter, reserving a few to add to pancakes on the griddle since chips tend to sink to the bottom of the bowl, even in a thicker batter like this. Make the most of your weekend breakfasts and treat yourself and your family to a fun change of pace with these chocolate chip vanilla yogurt pancakes.
Chocolate Chip Vanilla Yogurt Pancakes
Ingredients
1 cup milk
3/4 cup vanilla yogurt
2 eggs
4 Tablespoons butter, melted and cooled
1/2 teaspoon vanilla extract
2 cups flour
3 Tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup mini chocolate chips
In a large bowl, whisk together milk, yogurt, eggs, butter and vanilla.
In a medium bowl, whisk together flour, sugar, baking powder, baking soda and salt.
Add flour mixture to yogurt mixture and stir until combined and free to lumps. Set aside 2 Tablespoons of mini chips and stir remaining chips into batter.
Preheat a griddle over medium-high heat and spray with cooking spray. Pour about 1/4 cup of batter onto the griddle, adding a sprinkling of mini chips to the top if the pancake doesn't have enough already.
Cook until edges are set and tops begin to bubble, about 2 minutes. Carefully flip and cook other side for about another minute.
Repeat with remaining batter, adding mini chips as necessary. Hold cooked pancakes in a 200 degree F oven until all are cooked.
Serve with powdered sugar or maple syrup and bacon or sausage.
Makes 2 dozen pancakes.
